Spice Up Your Dinner with Jerk Lobster and Coconut Rice Recipe

Every year, we spend a week in the Florida Keys diving for spiny lobster. If all goes well, we return home with 24 lobster tails- enough to keep lobster on the menu for months. One of my favorite ways to prepare it is smothered in jerk sauce and then cooked in our Ooni pizza oven. Something about the high-heat flames caramelizes the sauce and takes lobster to a whole new level! I highly recommend trying this cooking method!
I like to pair the lobster with coconut rice and roasted sweet potatoes and of course, extra jerk sauce! This dish combines the fiery, aromatic spices of Caribbean jerk seasoning with the creamy sweetness of coconut rice and the natural caramelized flavor of roasted sweet potatoes. It’s a meal that feels both indulgent and fresh, ideal for impressing guests or treating yourself to a special night in.

What Makes Jerk Lobster Special
Jerk seasoning is a traditional Caribbean blend known for its complex layers of heat, sweetness, and earthiness. The key to this sauce is the Scotch Bonnet peppers- they have a unique flavor that is hard to replicate. Since I've never seen Scotch Bonnet peppers in a grocery store, I grow my own at home. You can also buy these from online retailers and they freeze really well. The sauce also includes pineapple juice and lime juice, which add a bright, tangy balance to the spicy kick.
Here’s a quick overview of the jerk sauce ingredients:
3-4 Scotch Bonnet peppers (more or less depending on your spice preference)
1 small red onion
4-6 garlic cloves
4-6 scallion stalks (trimmed)
1/4 cup apple cider vinegar
1/4 cup low sodium soy sauce (you can use regular but taste before adding salt)
2 tablespoons vegetable oil (I've also used olive oil)
Juice from 1 lime
1 cup pineapple juice
1 tablespoon freshly grated ginger
2 tablespoons brown sugar
2 teaspoons allspice
1 teaspoon nutmeg
1.5 teaspoons cinnamon
5-7 sprigs thyme
1 tablespoon black pepper
Salt to taste
Blend all ingredients until smooth, then simmer on the stove until the sauce thickens and reduces. This sauce works on everything from chicken to pork to vegetables!

Preparing the Lobster
Start with fresh lobster tails, split them in half lengthwise, and brush generously with the jerk sauce. Add a couple of pats of butter over the top. Place lobster tails in the Ooni pizza oven and cook until the meat is opaque and slightly charred around the edges. Usually takes 4-5 minutes depending on size. You can also grill your lobster or place them under your oven broiler. The heat caramelizes the sugars in the sauce, creating a sticky, flavorful crust that locks in moisture.
Making Coconut Rice
Coconut rice is a slightly sweet side that complements the spicy lobster beautifully. Use jasmine or basmati rice for the best texture. Cook the rice with coconut milk instead of water, adding a pinch of salt to enhance the flavor. Make sure to rinse your rice until the water runs clear. I also opt to use a 1:1 ratio of rice to liquid. This ensures the rice does not get mushy and clump together. If you want to spice it up, add a scoop of jerk sauce and/or scotch bonnet pepper before cooking. I love the flavor with added jerk sauce but it will change the color of your rice to brown instead of bright white.
Steps for coconut rice:
Rinse 1 cup of rice under cold water until the water runs clear.
In a pot, combine rice with 1 cup coconut milk and a spoonful of jerk sauce if desired.
Add 1/2 teaspoon salt.
Bring to a boil, then reduce heat to low and cover.
Simmer for 15-20 minutes until rice is tender and liquid is absorbed.
Fluff with a fork before serving.
You can also use a rice cooker- I always use a rice cooker because I'm lazy.
The subtle coconut flavor balances the heat from the jerk lobster, making every bite taste like vacation.
Roasted Sweet Potatoes for a Sweet Finish
Roasted sweet potatoes are a traditional Carribean side that pairs beautifully with jerk sauce. I like to cut the sweet potatoes into cubes and toss with jerk sauce and olive oil before roasting. Like I said, I love jerk sauce on everything.
Roasting tips:
Preheat oven to 425°F (220°C).
Spread sweet potato cubes on a baking sheet in a single layer.
Roast for 25-30 minutes, turning halfway through, until golden and tender.
The caramelized edges of the sweet potatoes add a subtle crunch and a rich flavor contrast.

Bringing It All Together
Serve the jerk lobster alongside a generous scoop of coconut rice and a portion of roasted sweet potatoes. Garnish with fresh lime wedges or chopped scallions for a pop of color and brightness. This meal offers a balance of spicy, sweet, and creamy flavors that excite the palate without overwhelming it.
This recipe works well for a weekend dinner or a special occasion. It’s impressive but straightforward enough to prepare at home with fresh ingredients. The homemade jerk sauce is the star, and making it yourself means you can adjust the heat and sweetness to your liking.
My favorite wine to pair with this dish is an Albarino but I'm sure a Rum Punch would be great too!
