Coca-Cola Cake with Chocolate Ganache

Coca-Cola Cake with Chocolate Ganache
Ingredients:
1 glass bottle Coca-Cola (real sugar preferably)
1 cup Flour
1 cup Sugar
2 tbsp Cocoa powder
1 tbsp Black Cocoa powder (if you do not have black cocoa, you can use regular cocoa powder
1/8 tsp Cinnamon, nutmeg and cardamom
¾ cup Mini Marshmallows
1 tsp vanilla
1/4 cup Buttermilk
¼ cup Oil
¼ cup butter
1 Egg
½ tsp Baking Soda
½ tsp Salt
For the Ganache
1 cup Bittersweet Chocolate
2 tbsp Glucose Syrup (optional but gives the ganache a glossy appearance
1 cup Heavy Cream
Flaky Sea Salt
For the Cherry Coulis
1 cup Sour Cherries
¼ c sugar
2oz Luxardo Sangue Morlacco Liquer (optional)
Cherry powder or finely ground freeze dried cherries (for garnish)
Instructions:
Cake- Bring Coca-Cola, butter, oil, and cocoa powders to a boil. Stir in mini marshmallows until melted.
In a bowl, combine flour, sugar, baking soda, salt, cinnamon, nutmeg, and cardamom.
Add Coca-Cola mixture to the flour mixture and stir to combine.
Stir egg, vanilla, and buttermilk until blended. Add egg/buttermilk mixture to batter and stir to combine.
Spray a mini loaf pan with Baker’s Joy. Pour batter into cavities and bake for 15-20 minutes until internal temp of 205 degrees.
Remove from the pan and let cool.
Chocolate Ganache
Heat cream and glucose syrup (if using) until simmering.
Remove from heat and pour over bittersweet chocolate. Leave for 2 minutes, then stir to combine.
Add butter and whisk until smooth.
Let cool until the desired pourable consistency, then pour over cooled
cakes and garnish with flakey sea salt
Cherry Coulis
In a saucepan, combine cherries, sugar, and cherry liquer. Bring to a simmer and
reduce.
Pour into blender and blend until smooth. Strain through a fine mesh sieve back into the saucepan. Continue to reduce if needed to reach the desired consistency.
