  1. In a pan, heat olive oil and sauté the garlic until fragrant.

  2. Add the canned tomatoes, salt, and pepper. Let it simmer for about 15 minutes.

  3. Stir in fresh basil before serving


Crispy Chicken

Ingredients:

  • 2 chicken cutlets, pounded thin

  • 1 cup Panko Bread Crumbs- seasoned with salt (try adding 1 tbsp of Italian Seasoning for extra flavor)

  • 1 egg- beaten

  • 1/4c flour

  • Olive oil

  • Salt and pepper

  • Mozzarella cheese


Instructions:

  1. Season chicken cutlets with salt

  2. Dredge cutlets in flour and then coat in beaten egg

  3. Press chicken into Panko bread crumbs

  4. Heat olive oil in pan until oil is shimmering

  5. Cook chicken 3-4 minutes per side until coating is golden brown.

  6. Remove from pan and allow excess oil to drain

  7. Preheat the Broiler

  8. Cover Chicken in Mozzarella Cheese and place under broiler until cheese is melted and bubbly.


To serve:

  1. Spoon tomato sauce on bottom of plate

  2. Top with crispy chicken

  3. Garnish with your choice of greenery. Arugula, Micro greens, or Fresh Basil are great options
