  • 1 pound lump crab meat, picked over for shells

  • 1 large egg, beaten

  • 1 tablespoon Dijon mustard

  • 1 teaspoon Worcestershire sauce

  • 1/2 lemon

  • 1 teaspoon cajun seasoning

  • 1/2 cup finely diced bell pepper (any color)

  • 1/4 cup finely chopped green onions

  • 1/2 cup Ritz crackers, plus extra for coating

  • Salt and black pepper to taste

  • Butter for frying


Using lump crab meat ensures large, tender chunks of crab in every bite. This recipe does not contain mayonnaise and instead uses only egg yolk to keep the crab cake light. Ritz crackers add butteriness and crunch when frying.


How to Make the Crab Cakes


  1. In a small bowl, whisk together the egg, Dijon mustard, Worcestershire sauce and cajun seasoning.

  2. In a large bowl, gently mix crab meat, bell pepper, green onions, and 1/2c Ritz Crackers. Be careful not to break up the crab meat too much. Add egg mixture until crab mixture will hold together.

  3. Season the mixture with salt and pepper.

  4. Shape the mixture into crabby patties.

  5. Carefully coat each patty with additional Ritz crackers for a crispier crust.

  6. Allow crabby patties to chill in the fridge for an hour- this allows crab cakes to firm up so they do not fall apart when frying.

  7. Heat butter in a large skillet over medium heat. Carefully fry the crab cakes for about 4 minutes on each side or until golden brown and cooked through.

  8. Transfer to a paper towel-lined plate to drain excess butter.


This method produces a delicate crab cake with a crunchy outside and a moist, flavorful inside.

The vanilla corn puree adds a creamy, sweet contrast to the savory crab cakes. Here’s what you need:


  • 3 cups fresh or frozen corn kernels

  • 1/2 cup heavy cream

  • 1 tablespoon unsalted butter

  • 1 vanilla bean scraped or 1 teaspoon pure vanilla extract

  • Salt to taste


The vanilla adds an earthy flavor to the corn puree without overpowering it.


How to Prepare Vanilla Corn Puree


  1. In a saucepan, combine frozen corn kernels and heavy cream. Cook over medium heat until the corn is tender, about 10 minutes. If using fresh, boil the corn cobs in salt water until tender and then cut kernels from the cobs.

  2. Remove from heat and transfer the mixture to a blender. Add butter, vanilla seeds or extract, and a pinch of salt.

  3. Blend until smooth and creamy. If the puree is too thick, add a little more cream to reach your desired consistency.
